Ice-cream taster: Experience
While it's fair to say that Lee has no formal training in ice-cream tasting, he certainly possesses a wealth of experience. And that's got to be a lot better than whatever they'd teach as part of a so-called "education", right?
Instead he takes every opportunity to sample ice-cream, and once even had one on a really cold day. That's the kind of dedication he brings to the table. Although he usually eats ice-cream on the move, or perhaps in front of the telly.
